At our central Texas B&B, we offer a delectable array of seasonal produce and local farm-fresh products to please every visiting palate. Our meals are served “Cook’s Choice” each morning based on local flavors and seasonal fresh fruits and vegetables. Monday through Thursday we provide continental breakfast featuring made in-house pastries and granola, with yogurt and orange juice delivered to your room.  Friday through Sunday mornings guest have the option of hot, gourmet breakfast in the dinning room, or continental breakfast.

Pour-over coffee is served hot with to-go cups provided, so you can take some with you.  Breakfasts are planned, so you are treated to a delicious, substantial breakfast before you head out to explore our wonderful small town of Belton, TX.  Kirk and Rhonda will often join guests for breakfasts on the weekends, so if you want to visit for a while and linger over one more cup of coffee you can do that as your schedule permits.

With enough notice, special accommodations can be made for almost any diet.

The Savory

Our savory dishes include bed and breakfast recipes from across the country and local flavors; all served with southern hospitality.

  • Frittata – Our frittata is made fresh with seasonal vegetables and herbs from Rhonda’s kitchen garden.
  • French Omelets – Another item fresh off the stove with queso fresco cheese and dried herbs for extra flavor from Rhonda’s herb garden.
  • Jalapeño Cheesy Grits – Cheesy grits are a tasty addition to any Texas-style brunch. Don’t think you like grits? We’ve changed a lot of minds with this comfort food recipe.
  • Biscuits – A lovely, light, and fluffy biscuit that can be served warm with fresh local honey and whipped butter or, of course, sausage milk gravy.
  • South Texas Breakfast Tacos – A Lone Star staple made with fresh eggs, local sausage/chorizo, local cheese, fresh bell pepper, potatoes, and onions, fresh or locally produced salsas in homemade tortillas.
  • Chorizo Eggs – This breakfast casserole is served in individual dishes. Chorizo, queso fresco cheese and cilantro served with a side of tomato-avocado salsa is a favorite dish of many including our guests who request a Keto diet.
  • Featherbed Eggs – Individual serving size egg soufflé that is light and fluffy, with just the right amount of queso fresco cheese.
  • Of course this is not a complete menu. These are just a few of the savory options offered for breakfast.  Also, Rhonda is continuously developing new dishes to add to the breakfast line-up

The Sweet

Whether you are local and are enjoying a staycation at Bryn Oaks Bed & Breakfast or you have travelled from out-of-state, don’t be afraid to try some of our breakfast sweets.  Some of them you can only enjoy at our B&B – they are original recipes!

  • Lemon Rosemary Muffins – This is an original Bryn Oaks Bed & Breakfast recipe shared by Brenda Bustillos. Brenda is a friend from Kirk’s days in the Army and is still proudly serving our country as a nutritionist.  She has also won the Texas State Fair with her original recipes.
  • Grandma Fagen’s Caramel Roll – Buttery caramel buns that are sticky and fresh out of the oven for your breakfast. This is Kirk’s Grandma’s recipe that is a guest favorite!
  • German Puffed Pancakes – A nod to the German settlers of Texas, this delightful dish is served with seasonal compote or maple syrup in a hot cast iron skillet made just for you.
  • Pecan Belgian Waffles – served with fresh-made buttermilk syrup. Pecans are straight from our friend’s pecan grove.  You have never had buttermilk syrup?  Think hot, creamy, buttery syrup served on light-as-air Belgian waffles with roasted pecans, and you will get what this breakfast dish offers.
  • Apple Turnovers – Homemade pastry. Hand diced and sauteed in cider apples.  Drizzled with vanilla cream.  All served hot out of the oven.  If you can smell them, you will come!
  • This is not all… Rhonda is continuously developing new recipes for the B&B.  These are just a few of what are actually offered.

Odds and Ends

Depending on seasonal availability or just a flight of fancy, these are some of the odds and ends that may show up at breakfast.

  • Seasonal Fresh Fruits and Vegetables – Have you ever tried moon grapes? Have you ever tasted a huge Texas blackberry that’s in season?  HEB, our local grocery store, inspires creativity and food adventure!
  • Missy Mae’s Best of Show Banana Bread – This stellar banana bread won best of show at the State Fair of Texas and in Missouri. Our nutritionist’s mother, Phyllis, developed this recipe and graciously shared it with Bryn Oaks.
  • Orange Julius – the classic blended drink that is a perfect meld of sweet, creamy, and good ole OJ is a nice breakfast addition.
  • Baked Pears – mini pears baked in individual dishes with a strap of puff pastry and a small drizzle of agave syrup.
